My Favorite Pumpkin Muffins

IMG_8215.PNGOkay everyone, just because Thanksgiving is over doesn’t mean the pumpkin goodness has to stop! These muffins are my absolute favorite to make and are the best sweet treat to whip up for friends and family. The recipe is super easy and includes my favorite ingredient, coconut oil! It makes a great substitution for butter and saves a few calories, right? But who’s counting, I’ve already helped myself to some! Besides, when you’re fitting in workouts 5x per week, you need a chance to treat yoself.


1 3/4 cups all purpose flour

`1 cup granulated sugar

1/2 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

2 teaspoons pumpkin pie spice

1/4 teaspoon nutmeg

1 egg

1 can (15 oz) pumpkin puree

1/2 cup melted coconut oil

1/4 cup almond milk (or milk of choice)

1 teaspoon vanilla extract



  1. Preheat oven to 375 F
  2. Use paper liners, ย or spray pan with nonstick spray
  3. Combine eggs, coconut oil, pumpkin puree, almond milk, and vanilla extract in a small bowl, whisk and combine
  4. In a large mixing bowl, combine flour, sugar, baking soda & powder, salt, pumpkin pie spice, and nutmeg
  5. Pour the wet mixture into the large bowl of dry ingredients and combine.
  6. Scoop the batter into the muffin tins and bake for 18-20 minutes or until a toothpick or fork comes out clean
  7. Place on cooling rack before serving
