Hey friends! Today I’m sharing with you my favorite salad recipe by far! It’s so simple that I almost feel like I can’t really call it a ‘recipe’. It’s jam packed with rich antioxidants, is super healthy, and doesn’t even taste like a traditional salad. The berries are sweet and rich in flavor! All we need for this nutrient packed meal is:
- Organic power-green mixture (I get mine from Trader Joe’s- contains baby spinach, baby chard & kale)
- Thinly sliced, raw almonds
- 1 tsp Raspberry Vinaigrette
- Pre-cooked frozen lean sliced chicken (My favorite is Trader Joe’s)
- Optional: Feta Cheese
First, I heat up 1 or 1/2 serving of the chicken in a pan with a small amount of coconut oil. Next, I lay the chicken on the bed of the green medley mixture. I add in equal amounts of all of the berries, pour the measured amount of vinaigrette, and top with a sprinkle of almonds. I don’t personally add feta cheese because I try to limit my dairy intake due to a minor intolerance but it is delicious if you decide to add it!
